Monday Dinner at Chez Smiffy

Too tired to cook, too tired to eat, so we kept it simple.

Almond encrusted "Dover Sole" (almost certainly really flounder ) with roasted vegetables (sweet potatoes, rutabega, and japanese zucchini) topped with almond fry bread

With a bite of dark chocolate for dessert.

  1. I am curious what almond fry bread is. It sounds interesting!!

  2. Well, after Rod had dredged the fish and then coated it in the almond meal, he whipped up the eggs, poured the remaining almond meal in to it, ten fried it up like a pancake in a bit of coconut oil. It was yummy!
