1 cup dates
1 cup raisins
1 cup prunes
1 cup pecans
1 cup walnuts
1 cup shredded coconut
Honey
Place the dates, raisins, and prunes in a food processor and mix until combined well. Finely chop the nuts and then mix them along with the coconut, by hand. Add enough honey to moisten then place into a cake pan or mold of your choice. Turn out onto a cake plate and serve!I LOVE fruitcake! :) Maybe it's not off the list after all!

Just to note, this recipe worked out VERY well. It's more like a sweet "Lara Bar" or nut roll, but I had poured brandy over the fruit as I ran it through the food processor and I added candied ginger and dried mango. The flavour was just about perfect. Rod was less thrilled with the texture, so next year we'll try using nut flours instead of crumbled nuts to see if that helps the texture.
