Sausage Making: Beef Sausage

Rod's Beef Sausage recipe

3.5 pounds of beef roast (sirloin tip)
.75 pounds beef tallow
2 teaspoons kosher sea salt
1 tablespoon fresh sage
1 tablespoon fresh rosemary
2 teaspoons black pepper
1 tablespoon dried thyme
2 teaspoons red pepper flakes
1 tablespoon granulated garlic
1 tablespoon granulated onion

Cut the roast and tallow into 1-inch cubes and layer it with the mixed herbs and spices. Run it through the grinder and into casings. (We used natural casings from the butcher.)

(We ground it twice, but it wasn't nearly as nice in texture as had hoped.)
